You know those days, where you reach for a piece of fruit just to realize that you've let every single piece go bad. Today, was one of those days. Upon approaching the fruit bowl, I realized that my last two pears and 3 bananas had all become a little-tad-bit overripe. Lucky for me, my forgetfulness to eat bananas is rewarded: with muffins!!
Enter the delightful, Ghiradelli dark chocolate chips I bought at World Market - because lets face it, chocolate chips make everything better.
1 cup sugar
1/4 cup melted butter
1 tsp baking soda½ tsp salt
3 mashed bananas
1½ cup flour
1. Mix sugar, butter, baking soda, salt and eggs together.
2. Add the mashed bananas and flour in parts, alternating
until both are mixed in. Be careful to not over mix.
3. Sprinkle chocolate chips in, at will. I didn't add them to
the ingredient list because I have NO IDEA how many I used.
4. Bake at 350° for 20-25 minutes
