Chocolate Chip Banana Bread Muffins

You know those days, where you reach for a piece of fruit just to realize that you've let every single piece go bad. Today, was one of those days. Upon approaching the fruit bowl, I realized that my last two pears and 3 bananas had all become a little-tad-bit overripe. Lucky for me, my forgetfulness to eat bananas is rewarded: with muffins!!

Enter the delightful, Ghiradelli dark chocolate chips I bought at World Market - because lets face it, chocolate chips make everything better.
1 cup sugar
1/4 cup melted butter
1 tsp baking soda½ tsp salt
2 eggs
3 mashed bananas
1½ cup flour
1.  Mix sugar, butter, baking soda, salt and eggs together.
2.  Add the mashed bananas and flour in parts, alternating
until both are mixed in. Be careful to not over
3. Sprinkle chocolate chips in, at will. I didn't add them to
the ingredient list because I have NO IDEA how many I used.
4. Bake at 350° for 20-25 minutes
Proceed to eat all of them while they're warm, because everybody knows they're best that way.

  1. I always have so many bananas that I end up throwing out since its just me and my husband is usually the one that will eat anything, regardless the expiration date. This is such a great idea!!

    Thanks for sharing :)

    1. I'm so glad I'm not the only one! My husband will eat anything, and I mean anything. It must be brainwashing, and all the MRES. That being said, since finding this recipe I sometimes let the bananas go bad on purpose...

They're that good. I especially like them because I'm too lazy to use a loaf pan and then slice them.

Whats on your mind?
