Okay, so I did not invent these. And technically I didn't even bake them. They are from here and originally from here. I (of course) made my own version because I have an aversion to ever doing anything the right way. However, these no bake peanut butter goodness balls are the very best stuff. I am already questioning how soon is "too soon" to make a second batch.
The truth of the matter is that I made them for a girls night, and they were gone before my husband even knew I had made them. Poor, poor man.
These would be a perfect by the pool, on the beach snack. They are relatively filling - just make sure you have something refreshing to drink with you. Trust me on that. Substitutions would be super easy - so make your own, mix it up, and tell me what you did. I plan to add some dried cranberries and walnuts to my next batch. Maybe white chocolate chips?
1 cup oatmeal1/2 cup ground flaxseed
1/2 cup crunchy peanut butter
1/2 cup chocolate chips
1/3 cup honey
1/4 cup agave
1 teaspoon vanilla
1. Mix all of the ingredients together.
2. Place in refrigerator for 30 minutes.
3. Pull out and roll into bite size balls.
4. eat to your pretty little heart's content.
